Homemade Blueberry Pomegranate Chip Ice Cream Recipe
Here's a simple homemade recipe for blueberry pomegranate chip ice cream.
Ingredients:
2 cups heavy cream
1 cup whole milk
3/4 cup sugar
1 tsp vanilla extract
1/2 cup fresh blueberries
1/4 cup pomegranate juice (or seeds)
1/2 cup chocolate chips (dark or semi-sweet)
Pinch of salt
Instructions:
Make the Ice Cream Base:
In a medium bowl, whisk together the heavy cream, milk, sugar, and vanilla extract until the sugar dissolves completely. Add a pinch of salt to balance the sweetness.
Prepare the Fruit:
Gently mash the blueberries with a fork or potato masher, leaving some whole for texture. If you prefer smoother fruit, you can blend them lightly in a food processor.
For the pomegranate, you can either juice it or use fresh pomegranate seeds. If you're using seeds, press them through a fine mesh sieve to extract the juice.
Combine the Base and Fruit:
Stir the mashed blueberries and pomegranate juice into the ice cream base. Mix well to evenly distribute the fruit throughout.
Chill the Mixture:
Refrigerate the mixture for at least 2 hours (or overnight) to chill.
Churn the Ice Cream:
Pour the chilled mixture into your ice cream maker and churn according to the manufacturer’s instructions, typically 20–25 minutes.
Add Chocolate Chips:
Once the ice cream is nearly done, add the chocolate chips in the last few minutes of churning, so they get evenly distributed throughout the ice cream.
Freeze the Ice Cream:
Transfer the ice cream to an airtight container and freeze for 3–4 hours, or until firm enough to scoop.
Serve and Enjoy:
Scoop and serve the ice cream in bowls or cones, and enjoy your homemade blueberry pomegranate chip ice cream!
This ice cream offers a lovely balance of fruity tang from the blueberries and pomegranate with the rich sweetness of chocolate chips. Enjoy!
