Frankfurter and Spinach Lasagna Recipes

Frankfurter and Spinach Lasagna Recipes

Lasagna is the ultimate comfort food—rich, cheesy, and satisfying. But when you introduce ingredients like frankfurters and spinach, you elevate the dish to something heartier, more flavorful, and even a bit whimsical. Frankfurters add a smoky, savory kick, while spinach brings freshness and nutrition to the table. Whether you're cooking for a busy weeknight, a casual get-together, or meal prepping for the week, these three frankfurter and spinach lasagna recipes will become quick favorites.

1. Classic Cheesy Frankfurter and Spinach Lasagna

Perfect for: Family dinners and cheese lovers.

This classic version of frankfurter and spinach lasagna marries layers of creamy béchamel, melty mozzarella, and savory tomato sauce. It’s simple to prepare, yet deeply satisfying.

Ingredients:

6 frankfurters, sliced into thin rounds

2 cups fresh spinach, chopped

1 box lasagna noodles (no-boil or boiled)

2 cups shredded mozzarella

1/2 cup grated Parmesan

2 cups ricotta cheese

1 egg

1 jar (24 oz) tomato pasta sauce

2 tbsp olive oil

1 tsp garlic powder

1/2 tsp salt

1/4 tsp black pepper

Instructions:

Preheat the oven to 375°F (190°C). Lightly grease a 9x13 baking dish.

In a skillet, heat olive oil over medium heat. Add sliced frankfurters and cook until lightly browned.

Add chopped spinach and sauté until wilted. Season with garlic powder, salt, and pepper. Remove from heat.

In a bowl, mix ricotta cheese with the egg and half of the Parmesan.

Spread a thin layer of tomato sauce on the bottom of the baking dish. Add a layer of noodles, followed by a third of the ricotta mixture, frankfurter-spinach mixture, and mozzarella. Repeat layers.

Top with the remaining sauce, mozzarella, and Parmesan.

Cover with foil and bake for 25 minutes. Remove foil and bake for another 15 minutes until bubbly and golden.

Let it rest for 10 minutes before slicing and serving.

Why It Works: This version is ideal for those who love a traditional lasagna but want something a little unexpected. The smokiness of the frankfurter cuts through the richness of the cheese, and the spinach keeps it balanced.

2. Creamy White Sauce Frankfurter and Spinach Lasagna

Perfect for: White sauce fans and those looking for a twist on tomato-based lasagna.

This creamy white sauce lasagna skips the tomato and replaces it with layers of béchamel and nutty Gruyère cheese, making it rich and luxurious.

Ingredients:

6 frankfurters, chopped

2 cups fresh baby spinach

9 lasagna sheets

4 tbsp butter

4 tbsp all-purpose flour

3 cups milk

1/4 tsp nutmeg

1/2 tsp salt

1/2 tsp black pepper

1 cup shredded Gruyère cheese

1/2 cup grated Parmesan

1 cup ricotta cheese

Instructions:

Preheat oven to 375°F (190°C).

In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute to make a roux. Slowly whisk in milk, stirring constantly until thickened. Season with salt, pepper, and nutmeg.

Add half the Parmesan and all the Gruyère to the sauce. Stir until melted.

In a skillet, sauté the frankfurters and spinach for 3–4 minutes until spinach is wilted.

In a baking dish, layer white sauce, noodles, spinach-frankfurter mixture, ricotta, and repeat. Finish with white sauce and the remaining Parmesan.

Cover and bake for 25 minutes. Uncover and bake for another 10–15 minutes until golden on top.

Let it cool for 10 minutes before serving.

Why It Works: This lasagna is velvety and smooth with just the right amount of smokiness and greens. The Gruyère gives it a nutty depth that pairs perfectly with the frankfurters.

3. Spicy Frankfurter, Spinach, and Pepper Lasagna

Perfect for: Spice lovers and anyone wanting a bold, modern take on lasagna.

This variation adds red pepper flakes, sautéed bell peppers, and pepper jack cheese for a spicy punch. It’s vibrant, zesty, and incredibly satisfying.

Ingredients:

6 spicy or smoked frankfurters, sliced

2 cups spinach, roughly chopped

1 red bell pepper, diced

1 green bell pepper, diced

1 small onion, chopped

3 cups marinara sauce

2 cups shredded pepper jack cheese

1 cup ricotta cheese

9 cooked lasagna noodles

1 tsp crushed red pepper flakes (adjust to taste)

1 tbsp olive oil

Salt and pepper to taste

Instructions:

Preheat oven to 375°F (190°C).

Heat olive oil in a skillet. Sauté onions and bell peppers until softened, then add frankfurters and spinach. Cook for another 2–3 minutes. Season with red pepper flakes, salt, and pepper.

Spread a thin layer of marinara in the bottom of a lasagna pan. Layer with noodles, ricotta, the pepper-frankfurter mixture, pepper jack cheese, and sauce. Repeat layers.

Top with extra cheese and bake covered for 25 minutes. Uncover and bake another 10 minutes until bubbling and slightly crisp.

Let rest 10 minutes before slicing.

Why It Works: This version packs heat and color. The spicy pepper jack melts beautifully, the bell peppers add crunch and sweetness, and the spinach brings balance.

Final Thoughts: Choosing Your Lasagna Adventure

Frankfurter and spinach might seem like unusual lasagna ingredients, but they open the door to creative interpretations of a well-loved dish. Whether you choose a classic tomato version, a creamy white sauce delight, or a spicy flavor explosion, you're guaranteed a meal that's hearty, satisfying, and just a bit playful.

Tips for All Versions:

Frankfurter choices: Traditional beef frankfurters are smoky and mild, but chicken or turkey versions also work well. For a gourmet touch, try cheese-filled or spicy sausage-style frankfurters.

Spinach swaps: You can substitute kale, Swiss chard, or even arugula for a different green. Just be sure to sauté and squeeze out excess moisture.

Make it ahead: All versions can be made up to two days in advance and baked when needed. You can also freeze unbaked lasagna for up to 2 months.
